Goat Cheese, Mango Ginger Chutney and Pistachio Bites

It’s Friday night, you have little to no food in the house, are very hungry and have this little one vying for all of your attention.

What to do for dinner?  Pasta?  No, that was a disaster last night.  Pizza delivery?  No, that was last Friday night.  Chinese take-out?  Another disaster.

Easy appetizer and salad requiring a quick trip to Trader Joe’s?   Yes, please.  What was my local store serving as a snack?  A mix of goat cheese, mango ginger chutney and pistachios on little toasts.  I love pistachios and knew we had some leftover from my Coconut, Cilantro and Pistachio Basmati Rice from earlier this week.  These little ‘bites’ would make a great appetizer.  We used them as part of our meal and really liked them.

Goat Cheese, Mango Ginger Chutney and Pistachio Bites

Goat Cheese, Mango Ginger Chutney and Pistachio Bites

5 oz goat cheese
1/4 c. mango ginger chutney (I used the Trader Joe’s brand)
3 T. pistachios, chopped
1 baguette, thinly sliced
Broil baguette slices 1-2 minutes, ~4 inches from top of oven.  Set aside.

Scrape goat cheese out of package and into small, microwave-safe bowl.  Break goat cheese into smaller pieces in bowl.  Microwave 30 seconds, until warm and starting to bubble.  Stir in chutney.  Spread on baguette slices.  Top with chopped pistachios.  Enjoy!
