It was late. We had been traveling through a snowstorm and I had worked 10+ hours. I wanted to make something good for dinner. I told Mark, Mr. Happy, what I planned on making:
He actually slouched, let out an ‘ugh’ sound and then said, “Well, it looks like I’ll need to pick up a frozen pizza.” So I marinaded and dredged my chicken in the coconut flour mix… and I chopped my vegetables and stir fried them with the rice. I placed our dinner on the table, which Mr. Happy set for us, and left the room. And waited. Then, I heard it. No, not the sound of plastic being torn off a frozen pizza, but a “MMMMmmmmmmmm” sound. I sat down and could not help but release a huge smile. Mark looked up from his dinner and asked me to add this into our repeat meal repertoire. Frozen pizza be damned.
I had seen the recipes on How Sweet It Is and had to try them. The Coconut Crusted Chicken Tenders were very similar to my Coconut Shrimp, so I knew they would be good. I did not make the dipping sauce – as peaches are not currently in season. The fried rice recipe is excellent – I just omitted the eggs, used canned pineapple chunks in 100% juice and cut the oil used in half.
