I am a popcorn addict. Sometimes, when I am starved for time, popcorn will tide me over as a meal. With such an intense enjoyment of popcorn it is a wonder that I did not discover the home popped/non-microwave variety sooner! Regardless, now that I have found a way to make homemade popcorn, I am in all my glory.
One of the recipes I have grown to really like comes from Gluten-Free Girl Every Day by Shauna James Ahern with Daniel Ahern. I am not on a Gluten-Free diet and I do not live with celiac sprue. I have no reason to avoid gluten… But some recipes, including many in this cookbook, are just plain delicious!
Take my friend, the corn kernel for example…. Grow the right variety, dry it and then shake it in a pan with some hot oil & voila – popcorn! I added Herbes de Provence to my popcorn with splendid results! My herb blend was store-bought, not homemade, and it was still very good. You should be able to find this herb mix at the regular grocery store. If not, you can order it Here. I like Herbes de Provence because this herb blend lends incredible flavor to my favorite soup, Ribollita!
Popcorn with Herbes de Provence
Recipe from Gluten-Free Girl Every Day by Shauna James Ahern with Daniel Ahern
2 T coconut oil
1/3 c. popcorn
2 tsp. Herbes de Provence
1 tsp. sea salt (or Kosher salt) + a little extra
Heat oil in a large dutch oven over medium-high heat. Add 2-3 popcorn kernels. Let them pop. Ahh hah! Now the pot & oil are hot enough to really get started!
Remove dutch oven from heat. Add remaining popcorn, Herbes de Provence, and 1 tsp sea salt.
Cover dutch oven, leaving a small (crack) open space for steam to escape.
Move pot over burner in a slow circular motion. You will hear lots of popping. I did this with two ‘oven-mitted’ hands. Keep moving the pot in this manner until the popping subsides. Remove from Heat. Season to taste with salt. Shake into your favorite bowl. Enjoy!
